As a child, I imagined hen soup was unique to Croatian delicacies. Our family consumed it with this sort of fervent regularity it approached worship. In my defence, I lived a sheltered life — which is to say I didn’t get out considerably.
I know much better these days, and have flirted with pho, a lemony Greek avgolemono, Jewish ‘penicillin’ soup with matzo balls and a gingery Chinese wonton soup. But whenever I truly feel under the climate, it is really this chicken soup, served first by my baba, and then by my parents, which I hanker for.
It can be a uncomplicated adequate recipe. All you require is some rooster on the bone, a few celery sticks, carrots and parsley, a handful of peppercorns and an onion or two blackened on the hob. Throw it all together, address it with water, simmer for an hour or two until your residence is crammed with the fantastic aroma of cooked rooster, and enjoy as alchemy comes about.
That very simple listing of ingredients, by themselves not a great deal at all, is magicked into liquid gold: a pot of bone-thawing, soul-warming goodness and for me, the style of residence.
Of all the Croatian dishes my mom and dad produced, and there ended up many — I’m searching at you stuffed cabbage roll, fish head soup, paprika rooster and fazol bean soup — this hen soup was the just one I whinged about and preferred in equivalent measure.
Sounds odd, I know, but when you happen to be manufactured to eat a dish as substantially as we were, you will have an understanding of this picket line mind-set. Goode (the only English-talking track the band could participate in), we little ones dutifully slurped bowls of soup though eyeing off plates of grilled cevapcici and raznici pork skewers.

Our loved ones was tiny back again then. My dad and grandparents arrived in Australia from the migrant camps in Italy in 1956. The rest of the Luksic clan shortly followed, promoting my grandparents farm to spend for their passage. Family members weddings and christenings were being very simple affairs, held in regional local community halls, with the catering carried out by my aunts and cousins.

My family’s hen soup
- 1.5 kg full chicken
- 2 celery stalks, about chopped
- 3 carrots, peeled
- 2 brown onions, peeled and blackened on an open flame
- 4 stalks parsley, plus excess to provide
- 6 peppercorns
- 1 egg
- 50 g semolina
- Pinch of salt
- Position rooster, celery, carrots, onion, parsley and peppercorns in a saucepan and address with chilly h2o.
- Convey to the boil, flip down the heat and simmer for 90 minutes right until the hen is cooked.
